More of what we have been up to...


Here are some more pictures. It is funny to look at the pictures. In one set, everyone is wearing coats and then barefoot and the coats and then shorts.... That is how it has been here this spring.

Easter egg hunt at the local plant nursery. And as you can tell by the winter coats, it was freezing cold.






Made our Easter bunny cake. I put Abbe in charge of the decorating and she did an excellent job. Wesley LOVED it! He made my day! "Aunt Anera, (that's how he says my name - just like his dad did) you made a bunny cake!!!" he said with a great big smile.



Eian's buddy moved to Florida. :(
I think Eian is still a little lot lost without him. He was in Eian's class at school AND lived right down the street. We all miss him.



Abbe had another friend over.



Ummm....wait doesn't she he look familiar? Let's just say Abbe talked him into it. He makes a cute little girl though doesn't he? ;)


Eian is now playing soccer. This is the only picture I have right now. It has been FREEZING cold every game. When it warms up, I will get some better pictures.



We went on the spring salamander hunt.









4-H is starting.

We now have chicks. I will have do a separate post on that whole ..... thing.

Autumn at our House

Abbe helped me redo the front porch for the fall. Or rather I did what Abbe told me to.


She was very specific on how she wanted things to look. She didn't have a lot to work with so I think she did an awesome job!


On an autumn baking note, first pumpkin pie of the season! Almost couldn't wait for it to finish baking.


And, yes, it was very, very good!

Dad brought us eggs on Wednesday. Before he left, Jason gave him a piece of pie and a cup of coffee. Jason also tried to take credit for the pie, but Abbe immediately set him straight.

More Cake Decorating

Ruth and Abbe each decorated yet another cake for their 4-H cake decorating project. Whew! A lot of cake going on around here. Good thing I don't like cake. Now, if they were doing a pie baking project, I would be in some serious trouble!

I had them practice some on wax paper before doing their cakes this time. We worked on different types of decoration too. Ball, shells, stars, built up stars, zig-zag, etc...

They worked....



 And tasted....

And worked until their hands hurt!

Eian came home from flag football practice ready to eat!

Cake baking lessons learned.

I learned two very interesting important lessons Tuesday night.

1. Don't bake cakes when the humidity is 95%.

2. Don't bake cakes with a seven year old helping you when it is 8:30 at night, and he should already be in bed.

Sigh. Four inedible cakes later..............

Let's start at the beginning. ("Let's start at the very beginning. A very good place to start." Julie Andrews in the Sound of Music - one of my favorite movies.)

Ruth and Abbe took a cake decorating class last night. They each needed one or two round cakes for the class. The girls were supposed to bake the cakes themselves but they were taking FOREVER to get their school work finished after their three day weekend.

I really wanted to get the cakes baked on Tuesday so that they would be easier to ice and work with on Wednesday. So, I stayed home to bake cakes while Jason took the kids to the library. The humidity in the house was atrocious. I did not have any cake mixes in the house because I have tried to quit buying such things. So, I had to bake cakes from scratch which really usually isn't any big deal.

But once I finished with the batter (I used yellow cake from Betty Crocker - usually a fail safe recipe.) I could tell something was different but really didn't think about it too much. The cakes really didn't bake well. They were not light but WAAYYY to moist and ..... weird.

Sooooooo, enter cake batch #2.

When I say I am going to bake another batch, Eian begs me to help. Fine. Whatever. Bake with the kids all the time. No problem, thinks Mama. Huh. We added a little more flour because I thought the humidity caused the first batch to turn out strange. Also, since I was in a hurry, I didn't realize that we forgot to put the butter and Crisco in until I had the cakes already in the oven and I was cleaning up. Sigh.

CAKE FAIL #2.

The second batch felt like cornbread but more firm when I put a toothpick in to check if they were done baking.

Ruth and Abbe decided to take all four cakes anyway. They made their Pumpkin Cakes at the class on the ones Eian and I totally screwed up.


Then tonight, Eian, Ruth, and Abbe made 'birthday' cakes for Sarafina and Splotch. Ruth and Eian made Splotch's and Abbe made Sarafina's.

It's been a long week.

Side Notes:

1. I have not been sleeping well due to having very strange dreams every night. And I remember them in the morning. The kids have gotten a kick out of hearing about them. Strange, strange dreams.

2. I wish I would have watched the Vuelta yesterday. Alberto Contador kicked everyone's butt from what I hear. Tried to watch the replay today but kept having to help with school work. Did watch the end of today's stage - was a really cool sprint finish.

3. Watching Project Runway while writing this. Love, love, love this show. Abbe likes to watch is too. I spend the whole time telling her, "That is not appropriate language." "You shouldn't treat people like that." etc. She just keeps saying, "I know Momma" in her disgusted 10 year old voice.

4. Sarafina is prowling around like the mad hunter that she is. Just a few minutes age she found the grasshopper that Eian accidentally let loose in the house after school. He kept telling me that he thought Smokey ate it. I think he was saying that so he could quit looking for it. I kept saying, "I don't want 40 million grasshopper babies in the house! You need to find that thing!" The poor grasshopper must have been trying to make a mad dash to the front door, not realizing that we have a tiger in the house!

Red, White and Blue Cake

I have wanted to make a flag cake for years but we just haven't accomplished this EVER!

Well, we did this year!

This was done all the way back on July 4, of course, and I forgot to share it with you all.

All I had to do was mention the cake to Abbe and Miss Persistent made sure we bought everything we needed at the store.


With my helpers we made a buttermilk cake and cream cheese frosting from The Joy of Cooking.

Then, I let my helpers go to town putting the flag together.


They really worked well together. I was very proud of how well they worked and talked things out.


I think it turned out pretty well. Don't you?

Watched a lot of the Olympics today with the kids. Abbe is the one who is most interested in the different sports. Eian was VERY interested in fencing - imagine that! And Ruth was trying to watch the dressage on the computer but nbcolympics.com kept freezing up. Aggravating.

Anyway, I watched the men's road race this morning. But NOT starting at 5:00 am!!!! Huh. Team USA was awesome. I was especially happy to see some young Americans doing so well. While watching the Tour de France, it seemed like all the Americans were almost 40 except for Tejay Vangarderen.

Well, Taylor Phinney finished 4th! Yeah! He is only 22. Most cyclists don't peak until their early 30's. Ruth and Abbe only like watching the part where they interview all the "cute young guys".  Well, Taylor and Tejay are two of their favorites. ;-)

Quiet....and misc.

After the rush of getting everybody up and out the door at 8:30 the past two mornings, I have a little bit of quiet time to myself!

Ruth has day camp at Alley Park this week. She is in nature and animal heaven! Yesterday, she got to go canoeing, geocaching, and made a fishing pole. She was stoked and tired! I love camp.

Abbe and Eian are on their second week of their second set of swim lessons this summer. Eian missed half of the first session with swimmers ear and some other sort of illness that is FINALLY gone.

Moxie, my friend Linda's dog, is with us for the whole week! She is so much fun. The puppy enthusiasm is great for a week. Then, we go back to 'old dog' time when she leaves. ;)

I have been making a sincere effort to get some sewing accomplished. Linda has really been pushing me - but that is what I really need. Someone to be accountable to.

Also, I have been trying some new recipes. Tired of buying granola bars and such when I know I can make them for much less and with better ingredients. Have tried 5 minute bread, coconut granola bars and pb/pretzel/choc chip bars. Jason has requested a "regular" granola bar - whatever that means.

Notes from taste testers:
1. Bread: too salty, perfect, not big enough, yummy
2. Coconut bars: AWESOME! Wonder what they would taste like baked? (note: only Eian and I like coconut!)
3. Pb/pretzel/choc chip bars: Mmmmmm, pretty good, can I have "regular ones"?


Sooooo, made a new batch of 5 minute bread with only 1 tbsp of salt, and am going to try to find "regular" granola bar recipe!

Easter

The weekend before Easter, our church had their Easter egg hunt at a local plant nursery - Rhoads. This is the first year they had it there and it was a really pretty place to have it.

 I imagine they will be finding eggs all summer! I know I just found one in my flower bed last night.


My little brother was down for the weekend, so he and Dad brought Wesley! My kids were so excited that Wesley was there. Eian is really starting to get into having a little cousin. Finally.


Wesley seemed pretty pleased with his stash  - even though his dad tied the bag closed so he couldn't get to the candy. Bad Daddy!

At our house, the Easter bunny came to our house on Saturday since Jason had to work on Sunday. The dogs were pretty excited to hunt for eggs too.


 This made for a much more relaxing Easter egg hunt and dinner and playing with the new things and eating too much candy and happier Mom and....


Everyone contributed to part of our Easter dinner. Jason and Abbe smoked ham and a pork roast, and did the vegies. Ruth made rolls with only a little bit of help from me. She did really well; I was impressed. Eian and I made homemade brownies for the first time. We have decided NO MORE BROWNIE MIX! They were awesome!


I am really thinking of asking the Easter bunny to do this every year. It really made getting up for Easter Sunday MUCH MUCH easier. We made it to the 8:15 am service!

Our church does not have child care for that service so everyone had to sit with me. They did pretty good - I only had to threaten to throw away their candy once.

I am sooo glad we went to that service though. We sang all of my favorite Easter hymns. They remind me of my Grandma - which makes me happy. She would play the piano and sing these hymns all the time. I miss her so much.


My friend, Linda, said, "So, you did secular Saturday and sacred Sunday too!" I guess we did!

Yummy, gooey cinnamon roll recipe I promised

This recipe was given to me by my mother. She would bake and bake and bake cinnamon rolls, rolls, and tea rings for Christmas every year when we were growing up. I am carrying on the tradition.

First you are going to scald the milk. Then add the butter.


Put this in a mixing bowl and let cool til a good temperature to add the yeast. Then.....add the yeast!

Let this sit until the yeast has 'bloomed'.


Add eggs, sugar and salt. Whisk well.


Add the first eight cups of flour. Stir pretty well.


Tip: I bought a two cup measuring cup just for baking bread. With all the distractions around my house, it is WAY too easy to lose track of how many cups I have put in.


Next add the rest of the flour - but maybe not ALL of the rest of the flour. This is where I used to mess up BIG time. You only add enough flour to make it a dough. IT WILL STILL BE STICKY.


Tip: I use bread flour. Now, you can use all purpose if that is what you have, but I find that bread flour makes a better roll. Also, I use unbleached flour.

Then just cover and let rise until double in a warm place. Here is where I would mess up again - I would knead the dough. Nope. NO KNEADING! This is why my rolls used to be stiff and dry.


If you are crazy like me, you bake some cookies while waiting for the dough to rise!


Now the fun part!

Also, this is where my helpers come in!

When the dough is just about ready, you need to start gathering your cinnamon roll making ingredients.

You will need:
1. Cinnamon
2. Brown sugar (light or dark whichever you prefer)
3. Melted butter (more than you think you will EVER need)
4. A little flour for rolling out dough
5. Rolling pin
6. Place for rolling
7. Greased pans (with more butter, of course)

Once the dough has doubled, you 'punch' it down.



Pull off enough dough to roll out on your place for rolling. Use some of that flour and roll out the dough.

Put melted butter on it. Enough to cover but don't do the edges.



Next put brown sugar on.


Then the cinnamon.



Tip: Use a good cinnamon. There is a difference. I usually buy mine at the Ashery Country Store. You can also look at different upscale stores. When I ran out the last time, I couldn't make it to the bulk store so I got some at the North Market. I also by my yeast in bulk at the Ashery Country Store.

Roll them up. Like I tell my kids, you kind of need to keep tucking it under while you are rolling them up so they won't fall apart once you cut them. Pinch the seam closed.



Slice your cinnamon goodness log. I usually do about 1 1/2 - 2 inches - I think.


Place in the buttered or caramel or pecan pan.




And let rise in a warm place until they look like this.


Side note: I really like metal pans better than glass - but not dark metal ones. I think they cook the cinnamon rolls better. I just didn't have enough for all of the baking I was doing this time. This is just my personal opinion and may be just my imagination! ;-)

Now bake at 375 F for about 20 - 25 minutes.

Turn out of the pan IMMEDIATELY! I always scrape out the yumminess that is left on the bottom of the pan and spread it on the rolls.


Let cool some, if you can! And enjoy!

Now I also make pecan rolls and cinnamon rolls with a caramelly goodness on top.


Just melt/stir all together in a skillet on the stove:



Pour enough into the bottom of the pan to cover. Add pecans, or not.




Be sure to butter the sides of the pan. Now just make the cinnamon rolls like above. The only difference would be to let them cool just a LITTLE BIT before turning them out of the pan. Otherwise all your caramelly goodness ends up all over your table instead of on your rolls!

The Recipe:
1 qt. milk, scalded
6 Tblsp butter
3 Tblsp yeast
4 tsp salt
1 cup sugar
2 eggs
8 cups flour
4 cups flour
Let rise until doubled. Shape. Let rise. Bake at 375 F.

Optional caramelly goodness:
1/2 cup butter
2/3 cup brown sugar
8 Tblsp Karo
(The above is not an exact science. You can add or subtract more of any of the ingredients to make it the way you would like it.)
